Medium (500gr)Soft, balanced, and hard to stop slicing. I make this banana bread with organic ripe bananas, organic einkorn and organic wheat flour, a slow sourdough preferment, organic A2 milk, and organic sour cream. Brown butter brings a warm, toasted note without making it heavy. It bakes in a Parisian wood mold and comes in two sizes: 500 g and 1,000 g. The crumb stays tender and slices clean; it’s sweet enough for dessert but easy for breakfast, and it freezes well for later.
