Our Grains & Process
Where are your grains sourced?
Our organic grains are sourced and milled locally throughout the Northeast. We partner with farms committed to regenerative farming practices and healthy soils. Every grain—from our heritage wheats to ancient varieties—comes from farmers who understand that great bread starts in the field.
Why heritage and ancient grains?
Heritage and ancient grains like einkorn, emmer, and Turkey Red wheat offer incredible flavor complexity you can't get from modern wheat. They're nutritionally superior with more minerals and proteins, easier to digest for many people, and support agricultural biodiversity. Plus, they connect us to centuries of baking tradition—these are the grains our great-grandparents knew.
Is your flour really organic?
Always. 100% organic, no exceptions.
Is your flour stone-milled?
Yes! We use 100% stone-milled flour. Stone milling preserves the wheat's nutrients, natural oils, and creates more complex flavors. It's the difference between fresh-ground coffee and instant—you can taste the whole grain's character.
Why sourdough?
Sourdough isn't just a trend—it's how bread was made for thousands of years before commercial yeast took shortcuts. The long fermentation breaks down phytic acid and gluten, making nutrients more available and the bread easier to digest. The natural lactobacilli create complex flavors impossible to achieve any other way. It's the difference between slow-cooked and microwaved—time transforms simple ingredients into something extraordinary.
Our Products
How long does the bread stay fresh?
Our organic sourdough with no preservatives stays perfect for 24 hours—that's when the crust sings and the crumb is at its peak. But here's the secret: slice and freeze it, then toast straight from frozen for that just-baked magic whenever you want it.
Why are some items frozen?
Our English muffins and cookies are flash-frozen immediately after baking to capture that perfect moment. They're designed to go straight from freezer to toaster or oven—no thawing needed.
How do I bake the frozen cookies?
Preheat to 400°F, place frozen dough on a lined baking sheet, and bake for 18-20 minutes until the edges are golden and the centers still look slightly underdone. That's the sweet spot for perfectly chewy cookies.
Allergens & Safety
What about allergens?
Our products are made in a shared commercial kitchen that processes ALL major allergens including wheat, dairy, eggs, soy, tree nuts, peanuts, fish, and shellfish. While we take precautions, we cannot guarantee any product is free from trace allergens.
Is your sourdough gluten-free?
No. While our long fermentation makes the bread easier to digest for some people, all our products contain gluten and are not safe for those with celiac disease.
